and spices. This has allowed them to acquire the sophisticated, diverse tastes inherent in a multi-cultural environment. When one asks, "What is Kuwaiti food like?", many responses are appropriate. Anyone who has been here even a short time knows that Kuwaitis' palates are as adventurous as their seafaring ancestors. Indian samosas, Mexican tacos, Italian ravioli, and Chinese chow mein are all part of the local culinary vocabulary. Many highly-trained and experienced international chefs attain flavors that are authentic to their native lands. Others try to adapt to Kuwaiti tastes. In any event, you will find most kinds of food here - and maybe more than you had imagined!

Indian food is especially popular. There are both smaller restaurants that feature southern vegetable dishes and spicy dals, and larger northern ones that serve meat. Lamb chops with ginger and biryanis (rice with saffron, meat, fish, or chicken) are common items on menus from northern Indian restaurants, but the diner should not forget such vegetable concoctions as palak paneer (a cottage cheese and spinach dish made with fresh herbs and topped off with cream), or potatoes stuffed with raisins, nuts and herbs.
